Kimmie in Real Life (week 6)



I am learning to be a more

patient person than I ever have been.

I LOVE my calendar in my kitchen as it has the most uplifting and funny quotes that always make me smile!

Here is the quote for this month:
"...and everywhere the flowers bloomed and people laughed and there was peace in the world"!

Anytime, I get feeling a little overwhelmed with life, I just think of this quote and it makes me chuckle and I am instantly put in a happy place with smile on my face...
FLOWERS, LAUGHTER and peace
always put me in a good mood!

I am a VERY organized person with my time...
I am a list person and it has become a joke that Tracy will come home and give me a big hug and kiss and put his hand in my back pocket and pull out my "list for the day".

Until this summer,
I usually accomplished everything I had on my daily lists, however, since I am still doing Physical Therapy each week and we still have Tae-Kwon-Do two nights each week, AND there is endless yard work that needs done, house work that never ends, meals to cook and most of all KIDS TO LOVE,

most days I am doing good to do a fraction of the things on my list that I have to take a moment each day and laugh and most of all feel SO grateful that I live the era of time that I do with washers and dryers and many of the modern conveniences of life that make my crazy life so much easier to deal with each day.

LIFE really is AWESOME,
especially when it's summer time and we enjoy most of our dinners sitting on the porch, enjoying good food, laughter and great conversation one with another!

Here are some of our food highlights for the week.

Our favorite smoothies turned purple this summer...
I was really hoping that one of our Bountiful Baskets would include grapes and yes it did, only they were purple.
SO, we compromised and used purple grapes and limes instead of lemons and it was still just as delicious as we remembered it.

Monday

I had VERY excited kids
when they opened the fridge on Tuesday morning to find
Apple Butterflies
sitting on the second shelf in the fridge for their morning snack.

Our Tuesday smoothie
was another favorite this week.

1 cup milk
2 cups strawberries
1 or 2 bananas
1 or 2 tsp. vanilla
1 or 2 cups ice
Blend together until smooth.

This is sure to satisfy
any Strawberry/banana milkshake you might be craving and much healthier!!

Veggies never tasted so good!!
This was one of the most favorite meals of the week.

Muffins and Eggs saved my Wednesday!!

Wednesday was by far my most hectic day of the week as I only had about 35 minutes to prepare dinner, between my daily chaos,
SO, I heated up the oven, baked up Cereal muffins and while the muffins were baking, chopped up veggies for our Omelette Eggs.
That way, when we got home from Ethan's Tae-Kwon-Do, we just sauteed the veggies and scrambled the eggs and we had dinner "lickity-split"!!

I noticed some overripe cherries
and so I pitted them and blended them with some other fruits and yogurt and that was MY favorite smoothie of the week!

I LOVE my sweet little boy in his little hat, sitting on a rock, eating dinner while enjoying the beauty of our yard.

I love this little guy
and realized that I had the happiest kid in the world, when I cooked up pasta for dinner. He said that was his favorite meal and asked why I didn't make it more often.
Friday was yet another busy day
without much time to prepare much of anything and so I cooked up our fresh green beans, browned one hamburger patty, added in one jar of Ragu spaghetti sauce and we enjoyed it over pasta spirals with a spoonful of cottage cheese.
I have to admit that it was really quite a yummy meal!

We realized our National Park Pass expired on June 30th and so we knew that we needed to head to our most favorite place on earth
YELLOWSTONE National Park to enjoy the beauty before the craziness of summer sets in even more.
We spent Saturday and Sunday enjoying the beauty and awesome family time together!

We didn't let being on a getaway stop us from being frugal and we brought food from home for every meal.
The only splurge we made was on some yummy ice cream to cool off.
As I get time, I can't wait to share photos and thoughts from our wonderful weekend getaways!

At our campsite for dinner, Tracy boiled up water and we cooked a Ramen up with frozen corn and peas and added in potato flakes to thicken it up. We then popped up a Jiffy Pop to enjoy after dinner

YAY we are enjoying the sunshine and heat from summer and savoring each moment we get to be together each evening!
With good food to eat each day, LOTS of laughter and smiles and wonderful family memories...

LIFE doesn't get any better than this!

Kimmie in Real Life (week 5)







ONE
person
can make
such a
difference!!

It's amazing how one person can make such a difference.
With Tracy being gone to Scout Camp for the majority of the week, we didn't go through as much food as we usually do. NOT because he is a big eater, but because we only fed three people dinner instead of four people. I didn't think it made that much difference, but it really did.

SO happy to have the love of my life home safe and sound and my boys are THRILLED to have their dad home as well.

I do have a confession to make this week...
I did spend $1.00 at the grocery store. My kids have been begging for our refreshing lime drink since the days are getting hotter and I noticed that our local grocery store had limes on sale 10 for $1.00 and so I went in and picked up 10 limes.

Other than that one expenditure,
I spent the rest of the week using up our Bountiful Baskets and putting our food storage to good use as well.

Here are some Food Highlights from this week.

Every Saturday after we pick our Bountiful Basket, I come home and pull all of the lettuce apart and run each leaf under water and then pat it dry with a paper towel.
I then put the lettuce in a Zip-loc bag
and then get as much air out as I can.
This makes the lettuce last much longer.

Sunday I had good intentions
to make a yummy Sunday evening snack and so I made up Cream Puffs in the afternoon, but got side-tracked helping Tracy get packed and ready for Scout Camp and I totally spaced off making up some pudding to fill the Cream Puffs with,
SO
, I just used them for lunch the next day and filled them with Tuna Salad for sandwiches.
They were delicious!


Our family LOVES real Maple Syrup,
however, it is $13.88 for a jug of this and so to make it stretch I alternate between filling the maple syrup jar with REAL maple syrup and homemade syrup.
After eating our pancakes on Monday evening, we had emptied the jar and so I made a batch of syrup, since the previous filling of the jar was REAL maple syrup.

RECIPE for Homemade Syrup
1 cup raw cane sugar
1/2 cup water
2 teaspoons Mapeleine Extract
Bring water to boil, add in sugar and extract
boil for 10 minutes. Cool and fill jar.
ENJOY!!

Tuesday was kind of a "clean out the fridge/freezer smoothie.
I even added in the rest of the Bok Choy to the smoothie and the kids never even knew it was in there.

Ethan's comment about Cantaloupe
was priceless this week.

As was cutting open the Cantaloupe Ethan said:
"Mom, that Cantaloupe looks like a brain...that will probably make me really smart"!

This was such a delicious smoothie.
Since I didn't have yogurt, I added in cottage cheese and it was perfectly yummy!
I LOVE making smoothies and my kids LOVE summer-time because we have smoothies many times during the week.

I haven't made this recipe for years.
Jade came with us on Saturday to pick up our Bountiful Basket and he spied the yummy nine-grain bread that they had available.
He asked me
if I would make my rolls that had "seeds" on the top of them.
I made some modifications to the recipe to work with what ingredients I had on hand and these rolls/bread seriously, look and taste like something you would purchase out of a bakery. I ended up baking 3 batches of these this week.
They're so good we are giving them as part of our Father's Day gifts.

Amazing!!

This soup also makes the top five
favorite meals we make for dinner.

I love having ingredients on hand that I can quickly throw a pot of soup together.
I pulled out a package of Cooked Wild Rice and Cooked turkey from our freezer and was able to whip up a pot of Chicken and Wild Rice Soup in no time at all.

It was such a novelty to have fresh green beans to enjoy in JUNE and our favorite thing to make with fresh green beans is Shepherd's Pie.

Thursday, Tracy came home from camp for a day to catch up with work, I had Physical Therapy, helped Tracy get gear unloaded from the car and then Ethan had Tae-Kwon-Do at 6:00. We didn't have time to eat dinner before we left and I was SO tired after Ethan was done that I just wanted to say
"Let's Grab a Hot and Ready and head home".
HOWEVER, I didn't give in and instead remembered that we had SouthWestern beans and rice in the freezer (click here for recipe)
and we also had tortillas in the fridge and so I came home and pulled a package out of the freezer, heated it up on the stove and made us burritos for dinner.

It was such a GOOD feeling
to not give into temptation and to keep moving forward with my quest.

My family is SO excited
for all of the yummy things we get to enjoy this week
...
cherries, grapes, peaches, plums, cantaloupe, more salads and broccoli!!

Life sometimes throws us curve balls and even though life isn't always a cake walk, there is not a day that goes by that I don't say:
"LIFE IS GOOD"!!

Kimmie in Real Life (week 4)

This morning...
I sent off my ScoutMaster
AKA...Mr. Smith
to Scout Camp for four days.


I miss him already
and dinner wasn't the same without my hubby.
Oh well at least it's only four days.
Life is SO GOOD,
but it will be perfect once this handsome man is home safe and sound with his family!!

This week I realized
how many of my recipes use "Mirepoix"

(combination of carrots, onions and celery) and I am down to my last bunch of celery.
I remember noticing a few months ago when Tracy and I were out shopping "Freeze Dried Celery" and that is something I am definitely going to be adding to our food storage for times when we don't have celery on hand.

Little did I know that our Bountiful Basket this week would include CELERY!!
YAY! I'm feeling like I'm going to survive our 3 months of no shopping.

Speaking of Shopping...
I went and helped my hubby pick up a few odds and ends at the grocery store for Scout Camp and I cannot believe how EXPENSIVE food has gotten. It's been quite awhile since we have bought much at the grocery store and I'm feeling very blessed for our food storage and for my knowledge of being able to make the majority of the meals I feed my family from scratch.

Here are some of the food highlights from our week.


My Sweet Friend Connie
posted a recipe on her Blog a few weeks ago for whole wheat blender pancakes. (click here)
I was intrigued with this recipe
as it is a way to use up your whole wheat and also a way to make pancakes if you don't have any buttermilk or milk in your fridge.
These were such a hit with the family and Tracy has added this to his recipe collection for weekend breakfasts.
DELICIOUS!!

A funny tidbit about Baby Bok Choy...
I dished up our Chow Mein and also put steamed Baby Bok Choy on all of our plates and the kids fought over the plate that had the biggest piece of Bok Choy.

I can't say enough how blessed I am to have kids that are NOT picky eaters!!

Our summer lunches
wouldn't be complete without Smoothies!
Throw in whatever fruits you have and puree until smooth and you have a healthy lunch that any kid would love.

Our Homemade Chow Mein
is in our top Five favorite meals we make for dinner.
SO easy, so healthy and SO good!

Adding a few FUN meals to each month
really is exciting for the kids and keeps you from having the desire to eat out.
I keep packages of Canadian Bacon and Pepperoni in the freezer for making Calzones and homemade pizza.

These are SO easy to make, delicious and the leftovers are great for lunch the next day.
(recipe coming shortly)

I used the last of our Vanilla Yogurt this week as the kids had bowls of yogurt with fresh peach slices on top for one of their snacks.
Ethan begged for more and so I compromised and made up Tapioca pudding and chilled it and then put peach slices on top of this the next day.

This was a great alternative to yogurt.
(obviously not as healthy, but I had to get creative)
I really think I'm going to have to try and make my own yogurt this summer as I am realizing how much my kids REALLY enjoy yogurt to eat.

Bless Ethan's heart...
he accidentally rolled the Honeydew off the counter and it broke in half before it was completely ripe.
SO, I just cut it all into chunks and put it in a container in the fridge and then made two different smoothies with it.
I just found a new smoothie favorite...
honeydew, pineapple, fresh peaches and honey.
Very Refreshing!

Thursday night
I baked up some Pork Chops in our toaster oven while we went to Ethan's Tae-Kwon-Do and it was SO tender and yummy for dinner.
I saved aside two Pork Chops and sliced them real thin and put them in the fridge.
On Friday I made a sandwich for Tracy for lunch and then used the remaining Pork Chop and made burritos for the kids for lunch.
DELICIOUS!

June 6th – 12th

Minestrone soup with Quesadillas
Rhubarb Crisp and homemade ice cream

I miss the JOY each night as he walks in the door and the how EXCITED the kids get when he comes home.
I miss his kisses... I MISS HIM!!

Dinner-time just isn't the same without Tracy!

Besides, half the fun of cooking,
is cooking for my hubby and I always enjoy his comments and feed back on what we are eating.
Cherishing and savoring
each and every moment with my kids this week while my awesome hubby is making a difference in the lives of the boys he took to Scout Camp!

Yummy Butternut Squash!


I am a squash lover
...
other than Spaghetti Squash,
there's not a squash that I have tried that I haven't just loved!
I honestly could eat squash everyday if I had it available to eat.

When I was pregnant with Ethan,
at one of the doctor's visits I was reading through one of the magazines sitting on the table in the office and came across this recipe. It originally called for Leeks and that is how I made it the first time, but every time I went to make it I never had Leeks on hand and so I tried an experiment
and just sauteed up onions instead of the Leeks and this actually tasted
SO much better and so that is how I have been making it ever since.

I try and keep a few packages of Canadian Bacon in my freezer to have on hand for making Pizza, Calzones and this Casserole.

We have been blessed
on 2 different weeks with Butternut Squash in our Bountiful Baskets and so what a treat it was to make this up and break up our many bowls of soup that we eat.

There were 3 pieces leftover from dinner and so I sent a piece with Tracy to work for lunch and Jade ended up eating mine AND his piece. I can't believe that my kids like this as much as Tracy and I do!

The onions, squash, apples, ham, cheese and spices
blend together to make the most delicious casserole ever.

This would also be a perfect thing
to make for a breakfast casserole.

Butternut Squash Casserole

1 large (or 2 small) butternut squash peeled, seeded and thinly sliced
1 or 2 onions thinly sliced/then sauteed until tender (I use 2 onions)
2 small apples, peeled, cored and thinly sliced
2 teaspoons thyme
3 Tbsp flour
4 oz. shredded Swiss cheese (OR Mozzarella cheese)
1 (6oz) package Canadian Bacon
1-1/2 cups chicken stock
1 piece wheat bread toasted and crumbled

Preheat oven to 375 degrees.
In a shallow baking dish layer 1/3 of the squash, then ½ of the sauteed onions and then ½ of the apple slices. Season with a sprinkle of thyme, ¼ tsp pepper and a scatter of flour and 1/3 of the cheese. Layer half the meat.


For the second layer repeat the process topping with squash.Add chicken stock.
Cover and bake for 30 minutes.
Remove from oven, uncover and sprinkle with bread crumbs and remaining cheese.
Return to oven uncovered and bake 30 minutes.
Remove from oven and let stand for 15 minutes before serving.

Kimmie in Real Life (week 3)


PLANNING...

that is what I learned this week!
Even though, I am really quite good at planning, I had to work extra hard at planning and being organized this week.

Since I have to go to three days of Physical Therapy each week (I go right after work) and Tuesday is Scouts and Young Men's activities for all three men in our family and Ethan has Tae-Kwon-do each Wednesday and Thursday from 6-7 pm it made it where
I really had to plan and be on the ball more than normal.

(especially, since I don't have any moments that I'm not at work, OR, surrounded by my adorable sons!)

Chaos and all,
it was another GREAT week.

Here are some of the food highlights from this week.
(It was a very dreary and gray week, without much sunshine and so some of the photos don't look the best because we didn't have nice outside light shining in our kitchen windows)

This was this week's favorite...
Fresh cut up orange slices.

I lost track of how many times Ethan BEGGED for more orange slices and I felt bad that I didn't have more to give him!!

Another Delicious smoothie...
Frozen pineapple out of our freezer,
the blackberries, peaches and coconut were leftover from the previous weeks Bountiful Basket

I spiced up our salad by making some
homemade croutons out of my French Bread.

I sliced a piece of bread, lightly buttered it,
sprinkled generously with garlic salt,
sliced into chunks and put it on a cookie sheet in our toaster oven until they were lightly toasted.
YUMMY and SO easy!

And one more Smoothie...
Frozen pineapple, strawberries and blueberries out of our freezer,
summer squash and oranges were leftover from the Bountiful Basket.
Smoothies are a great way to "Disguise" veggies for your kids

This is such an easy and yummy treat
that uses food storage ingredients AND makes up real quick.
Here is the Recipe:
Caramello
1/2 cup popcorn kernels either popped on the stove or in the air popper
(DO NOT USE MICROWAVE POPCORN)

(Caramel Coating)
3/4 cup REAL butter
3/4 cup brown sugar
3 cups of marshmallows

Put the butter and brown sugar in a microwave safe bowl and cook on high for 2 minutes.
Stir.
Add the marshmallows and cook for another minute, (or until marshmallows are melted).
Stir again and pour over popcorn and mix until all popcorn is coated.

(This is a yummy treat that makes up in just a few minutes and is great to make for something yummy to eat when you have unexpected company.)

Fresh baked bread and yummy produce to enjoy.
This brings me comfort!

My kids were SO excited
to steam up our Baby Bok Choy for dinner and Tracy grilled up some Salmon on the grill.
This was Ethan's FAVORITE meal we had this week!

I am really realizing more than ever
how very BLESSED

I am and how grateful my kids are for each and every morsel of yummy food we have to eat.
I learned this week that baking French Bread can be made under any circumstances and no matter how busy and hectic the day is, it can be made without much hassle at all
(even though

I have HAPPY, HAPPY kids
because this next week we get to enjoy grapes, peaches apples, honeydew, bananas, corn on the cob and another delicious salad and Baby Bok Choy.
