Quick, Easy & Yummy Pecan Bars!


Oh, how I just LOVE Pecan Pie! 
And to think that at one point in my life that I didn't like it, is just sad.


Tracy and I had never had Pecan Pie until we had been married for 5 years. It just never sounded like it would be good.  I mean when you can choose from Coconut Cream, Lemon Meringue, Chocolate, Cherry, Apple, or any kind of Berry pie, why in the world would you want to choose Pecan?  

When Jade was just a babes, we went and had dinner at one of our friends houses and she offered us a piece of Pecan Pie for dessert...all I can say is WOW!
Yummy...we were hooked and not a year goes by that I don't make up a batch or two of these bars. 

For some reason, I have never been able to get Pecan Pie or Pumpkin pie to turn out. Try as I might, these 2 pie recipes, have never turned out well.
HOWEVER, I came across this great recipe over 10 years ago and it
tastes exactly like Pecan Pie
turns out perfect every time,
throws together quickly and
you don't have to roll out a pie crust...

According to Tracy
the BEST part of all about these bars, is since Pecan Pie is SO rich, these bars are perfect as you can just grab a little bar to enjoy and not have to deal with a slice of pie that is so rich it will take you all night to finish.

Pecan Pie Bars...
so yummy, SO good and absolutely delicious!
 
Pecan Pie Bars

(Bar Cookie Crust)
2 cups flour
1 cube REAL butter
1/3 cup sugar
1/4 tsp. salt

1.  Preheat oven to 350 degrees.  Spray baking pan with cooking spray.
2.  In large bowl with mixer at medium speed beat flour, butter, sugar and salt until mixture resembles coarse crumbs. Press firmly into bottom and 1/4 inch up sides of prepared pan.
3.  Bake for 20 minutes, or until golden brown.

(Pecan filling)
2 eggs
3/4 cup Karo Corn Syrup
3/4 cup sugar
2 Tbsp. melted butter
1 tsp. vanilla
1 1/2 cups coarsely chopped pecans

1.  Prepare and bake pie crust
2.  Meanwhile, in large bowl beat eggs, corn syrup, sugar, melted butter and vanilla until well blended.  Stir in pecans.  Pour over hot crust; spread evenly. 
3. Bake for 25-30  minutes or until filling is firm around the edges and slightly firm in center.  Cool over night.  Cut into bars.

I may just have to try these? I'm with you... pecan pie when there are so many other choices? Plus, the few times I've had it, I haven't loved it? Maybe, just maybe I'll love it in bar form?

PS- I almost had a heart attack at the price of pecans when I was picking some up for my caramel apple pie for thanksgiving.... But they do taste good enough to justify the price!

Oh, you are killing me with the Pecan bars. Sooooooo delicious.

I have a goal to loose 20 lbs and it seems like a mammoth job ahead of me. Such good food around..especially at this time of year.

You were so very sweet to leave that comment on my blog. Thanks Kimmie....I remember the photos of you at the bloggy get away at Bear Lake. Wish I could have been there in PERSON, and not PAPER.

It is so very hard to loose a loved one...as you so well know yourself. That is very sad about your sister. It is very sad about my son. I wonder why sometimes there has to be so much sorrow in the world. Why can't we cure those things that "hurt" others. Make them suffer.
I will think of Matt every day of my life. Each night as I close my eyes to sleep and after having said my prayers, I'll tell him I love him.

The blogging community has been so wonderful to me these past few days. I am humbled by that for sure. Who would have thought!!!

Yummy. I made your bread sticks the other day. Very Good. I melted 1 cube butter put it in the blender with 3 cloves garlic. Very yummy.

These were so yummy! Everything you brought to Thanksgiving was delicious! Your coconut cream, the rolls, the pecan bars. You're amazing!! Glad we've gotten to spend a little time with you.

These look fantastic. You will have to try my grandma's secret to perfect pumpkin pie. She cooks her filling on the stove like a custard. Cool in fridge then when ready to serve put in baked pie shell. It makes it so you don't get the soggy bottom crust also.

How on earth did I miss this post Kimmie?
I haven't been on the computer as much either - and was not on at all during the week of Thanksgiving when my family was home.
I decided to check in on you tonight because i was thinking about you. Hope you guys are doing great and you are enjoying your new floors - AND being back in your house for Christmastime!
The floors look absolutely beautiful.
Pecan pie has been my absolute favorite pie my entire life! TOTAL FAVORITE!
I did a few Pecan Pie posts in November and I think I made a total of 6 pecan pies this year. They are just soooo yummy. When my kids were little they didn't eat them much but now that they are older they all love them too so I make one and it is GONE!
I will definately have to try these bars before I hit the diet (ugh) after Christmas :-D Anything that tastes remotely like pecan pie is a keeper in my book!
