SO, I love making meat stretch
and I have come across a great way to make your
BBQ Chicken and Pork meat stretch that is SO yummy and pretty much doubles your meat!
I LOVE when I can make things healthier,
while making my dollar stretch as well!
BBQ Chicken OR Pork
(cook 4 boneless Pork Chops, OR, 2 large chicken breasts in crock pot until tender)
After tender, shred meat and drain off juices
In a large pot on the stove saute together until VERY tender:
1 Tbsp. butter
1 large onion thinly sliced
1 large bell pepper thinly sliced
After veggies are tender add in:
1 sliced tomato
cooked Pork, OR, Chicken
1/2 cup (or more) of your favorite BBQ sauce
Bring to boil and simmer 10-15 minutes
Serve on homemade buns and
enjoy a delicious, frugal meal
with more veggies and less meat!
