Baked Apples... It's what's for breakfast!


What to do with 
all of the apples from harvest...
Our new favorite is making Baked Apples for breakfast.
They are full of fiber, great protein, fat and a little bit of sugar.
Really great energy to start off your day!

Baked Apples
6 Apples, cut in half and cored
4 Tbsp. melted butter
1/2 cup rolled oats
1/4 cup whole wheat four
1/4 cup ground flax seeds
1/3 cup chopped walnuts, OR, pecans
1/3 cup pumpkin seeds
1/3 cup brown sugar
1/8 tsp. salt
1 tsp. cinnamon

Line a small pan with tin foil.
Wash and cut apples in half and core them.
Put them cut side up on the tin foil.
Combine oats, flour, flax seeds, nuts, sugar, salt and cinnamon in bowl.
Pour melted butter over the ingredients and mix well.
Completely cover apple halves with mixture
Bake at 350 degrees 45 minutes to one hour until mixture is browned and apples are soft.
Serve with a big heaping of Greek Yogurt 
and you have a delicious, nutritious and hearty breakfast with plenty of energy to get you through your morning! 
(and it even feels like you're eating apple pie, without the guilt!)
