Once you make these
you'll never go back to store bought again!
SO, last year, since we were going three months with no shopping, it meant there wasn't purchasing hot dog or hoagie buns from the store for our summer outings/camp-outs and so I took my French Bread recipe and instead of shaping into 2 loaves
here is what I did...
I divided it into 12 pieces,
rolled each piece of dough out,
rolled it up into a cute little loaf and tucked the ends under,
put them on a greased cookie sheet,
let them rise for 30 minutes,

cut a slit in the top of each one,
brushed them with egg white,
baked for 30 minutes
and Voila...
perfect buns
that make the yummiest sandwiches,
cheese bread, sloppy joes AND hot dog buns!
Actually, the possibilities are endless
to what you could use these for!

Mix and set aside.
½ cup warm water
1 tsp sugar
2 Tbsp yeast
Mix the following together in a mixer:
1 Tbsp Olive oil
3 Tbsp. Sugar
2 tsp salt
2 cups HOT tap water
Add yeast mixture to above ingredients, mix well.
Add 2 cups unbleached white flour. (this will be lumpy).
Add 3-4 more cups unbleached white flour until you have soft dough...it should be soft, not overly sticky, and not stiff (I add in 3 cups of flour and then add in more flour in 1/4 cup intervals until you have a nice soft dough)
Shape into a ball and place in a greased bowl and let rise for one hour.
Punch down every 20 minutes.
Punch down and then divide into 12 pieces for Hoagie Buns
Roll into rectangles and then roll into mini loaves and tuck ends under.
Put loaves on greased cookie sheet and let raise for 30 more minutes.
Slash top of each loaf with and brush with beaten egg white.
Bake at 350* until golden brown (about 30-35 minutes).

I don't think there is a better feeling in the world than to tackle making yummy things and to know that you made something delicious for your family to eat, with your own two hands out of basic ingredients such as...
flour, sugar, salt ,water, oil and yeast.

I wanna make these with you one day when we are there! Can we have a one day..baking with Kimmie class. That would be so fun. I want to do rolls & pie crust! I feel pretty confident about a lot of my cooking and baking but bread and pie crust are your specialty! I have been looking on Craig's list for a Kitchen Aid mixer. I know you can do it without it..but I want one!

I love these buns!! I only made 8 though and they barley fit on my baking stone. I am gonna try 12 on a cookie sheet next time. I have been wanting to mix whole milk with morning moo for a long time now, but I don't have one of those great mixing pitchers. I did it today and used the vitamix. It worked great!!!
